The diet booklet
Experts advise Wilson’s disease patients to reduce their dietary intake of copper:
- to less than 1 mg/day at the start of treatment
- to less than 3 mg/day once the disease has been stabilised
This booklet, compiled by the CNR Wilson team at Hôpital Lariboisière, and notably by the dieticians Charlotte Henrio and Estelle Garcin, aims to offer advice on how to limit the amount of copper in your food, while ensuring that you eat a balanced diet..
Different foods (milk, meat, fish, vegetables, fruits, drinks, etc.) are presented as a function of their copper content.
- Green column: these foods are allowed because they contain less than 0.30 mg of copper per 100 g or per helping
- Yellow column: these foods should be eaten in moderation because they contain between 0.30 and 1 mg of copper per 100 g or per helping
- Orange column: these foods should only be eaten occasionally and should be avoided until the disease has stabilised because they contain between 1 mg and 3 mg of copper per 100 g or per helping
- Red column: these foods should be avoided because they contain more than 3 g of copper per 100 g or per helping
This document cannot be exhaustive but has taken account of the most common questions raised by patients.
